First I would like to say that I have never attempted to blog before--so please bear with me as I embark on one of my New Years Resolutions...

2010 was very good to me. I bought a house with my boyfriend, Chris and changed careers, among many other things. I was fortunate enough to be able to take a little break between my old job and current job. And by a little, I mean almost 5 weeks.

I found myself on the couch often, watching Giada, Paula Deen, Barefoot Contessa, The Neelys -- you know, the usual Food Network lineup. I began experimenting with recipes and realized that cooking is not as hard as it looks (despite the fact that I have to wear my hair in a pony tail with an apron on - as opposed to Giada whose hair is perfectly styled while simultaneously showing off the girls and creating thousands of amazing recipes with her key ingredient, marscapone cheese -- maybe I am a tinsy bit jealous).

College is over, and as much as I don't want to admit it, I am becoming an adult. No longer is it acceptable to bring a pack of keystone to a party. And I am sure the love of my life will not stick around forever if he continues to get fed Raman Noodles. So, pour a glass of wine and join me on my journey through the kitchen as I teach myself to cook! I hope you and your family enjoy these recipes as much as we have.

Turkey Hummus Burgers & Sweet Potato Fries

Sorry, its been a few days since I have blogged. I have been busy being newly ENGAGED!!!!! Chris proposed on Friday at Robert Carr Chapel in Fort Worth. It was absolutely perfect, my ring is stunning and we can't wait until January 14, 2012!!! So...from now on, if I start blogging unhealthy recipes-- make me stop!! I've got a dress to find and fit into! ;)

I've really been looking forward to sharing this recipe with ya'll! I made it a few weeks ago for some friends after church, and it was definitely a hit! Here is the recipe for only two burgers.



Turkey Hummus Burgers

Ingredients:

1/2 lb lean ground turkey meat
1/4 cup spicy red pepper hummus
1 tsp corriander
S & P to taste
2 100 calorie sandwich thins
1 plum tomato, sliced
1/3 cup crumbled feta cheese
1/2 english cucumber, diced
1 1/2 tbs red wine vinegar
1/2 tbs extra virgin olive oil
1/4 cup fresh chopped parsley

Preparation:

1. Combine diced cucumbers, feta cheese, vinegar, oil, s & p. Set aside.
2. Mix turkey meat, corriander, hummus, s & p, and parsley. Wet hands with water (or else hummus will stick) and form 2 patties.
3. In a large skillet on medium high, heat 2 tablespoons of olive oil. Add patties and let cook for 3-4 minutes on each side until done.
4. Toast buns with a little bit of butter in oven or in toaster. Brush the inside of buns lightly with watered down hummus. Add the turkey burger, tomato slices and cucumber topping. Mmmm!! One of my new favs!

How  can you eat a burger without fries? How about some healthy sweet potato fries???

Sweet Potato Fries

Ingredients:

2 sweet potatoes, peeled and sliced julienne style
garlic powder
s & p
olive oil

Preparation:

1. Heat oven to 450 degrees.
2. Drizzle oil over potatoes and add seasoning to taste. Only need about a tablespoon or so of oil.
3. Bake for 20 minutes and then switch to broil for 3-5 more minutes. BE SURE TO LEAVE OVEN CRACKED ON BROIL OR YOU WILL BURN YOUR FRIES!!!
